Yum - I love the look of the angels on horseback! What is the stuffing for the shrimp?

The idea, and the recipe, for the Archangels on Horseback comes from A Continual Feast: A Cookbook to Celebrate the Joys of Family and Faith Throughout the Christian Year, by Evelyn Birge. I love, love, love that cookbook--wonderful recipe ideas for the whole liturgical year! (it's available from amazon.com, I just don't know how to link from here) :)

Anyway, they couldn't be simpler: Just scallops wrapped in bacon, and broiled. And it really was yummy! :)

Looks yummy. We made the bannock this year for the first time. I was surprised well it went over with the homeschool group. I didn't think the kids would like it that well.
